御寒大肉菜:牛腩煲

天气渐渐变凉了,是时候来上一锅温暖的大肉菜啦!


牛腩煲

主料:牛腩500克,土豆150克,胡萝卜约150克,洋葱约50克;

调料:郫县豆瓣2.5汤匙,八角1颗,桂皮1小块,生姜1块,大葱1段,料酒1汤匙,白糖1茶匙,酱油1.5汤匙,盐适量;

做法:

1.准备好各种原料;

2.将牛腩切成约4厘米见方的块,放入清水中浸泡半小时以上,期间换几次水,洗净血水,沥干;

3.土豆与胡萝卜分别去皮,切滚刀块,洋葱切块;郫县豆瓣剁碎,八角、桂皮洗净,生姜拍破,大葱切段;

4.热锅放油,下入牛腩,煎至牛腩变色后舀出,待用;

5.锅内余油,下入葱、姜、八角、桂皮,煸出香味;

6.放入郫县豆瓣,小火,炒出红油;

7.下入牛腩,炒匀;

8.将炒好的牛腩移入砂煲中,加入足量的热水,放入料酒、白糖、酱油;

9.盖上盖子,烧开后小火煮约1个半小时;

10 .放入胡萝卜、土豆、盐,再煮约半小时;

11.最后放入洋葱,至洋葱断生即可

经验分享:

1.牛腩煮熟后会缩小,因此要稍微切大块一些;

2.郫县豆瓣较咸,所以要适量减少一些盐的用量,以免太咸;

3.要留意煲中的汤汁不要烧干,如需加水,要加热水。
